The Path
Bar technique built in a New York service room rewards control, repetition, and close reading of the guest; Shingo Gokan developed that working register at Angel’s Share in New York City (2006–2016), a decade behind the bar that established the precision and restraint associated with his hospitality. A multi-city bar practice now runs through current operating roles: Shingo is partner of Speak Low, partner of Sober Company, owner of The SG Club (since 2018), creator/operator of The Odd Couple, and creator of SG Shochu (since 2020).
The Work Today
Japanese flavor and tradition, worked with ingredients from beyond Japan, define the Shanghai frame at Speak Low, where Gokan is partner. Sober Company adds a second Shanghai role within the same current body of work. Shanghai also holds The Odd Couple, set up by Gokan with Steve Schneider. In 2020, SG Shochu added a shochu project to work already spanning Tokyo, Shanghai, and New York City.
