Those early kitchens established the measured rhythm of the work, but they also left room for a hand that would not stay inside a narrow definition of restraint. The result is a style that uses the discipline of kaiseki as its frame, then tests that frame with ingredients and effects that can push the palate harder than tradition usually does. When Haramasa opened in 2013, that approach moved into a fixed setting in Tokyo. As owner and chef-owner, Shotaro Hara has used the restaurant to show how structure can coexist with disruption.
