Training at Ginza’s Tenichi placed him in a setting where tempura is handled with strict attention to detail, and that apprenticeship became the base of his practice. He later worked as chef at Tempura Niitome in Nagoya (until 2023), carrying the technique forward while sharpening his own sense of timing, ingredient reading, and restraint. His own line — “I've devoted my life to tempura.” — lands as a plain statement of how the craft is lived, not discussed. By 2023, that long attention to precision had brought Shuji Niitome to Tempura Niitome in Tokyo (since 2023). In tempura, small adjustments change the result: the oil, the batter, the moment a piece leaves the fryer, the pause before service.
