Shunichi Matsushita has been Head Chef of Kioicho Fukudaya in Tokyo since 2016. The work draws on an upbringing in Southern Nagano, where mountain villages and close contact with ingredients at their source shaped an early, practical sense of season and origin. The Climb
Training at Tsuji Culinary Institute gave Shunichi Matsushita the discipline and precision that now define his work. The school provided the framework; the years after it gave that framework use.
