Stefan van Sprang is the chef and patron-cuisinier of Restaurant Aan de Poel in Amstelveen, a two-Michelin-starred restaurant on the shore of Lake De Poel. He opened Aan de Poel in 2007 after working at Ron Blaauw and other top kitchens, and the restaurant retained its two Michelin stars in later coverage.
