Koji Takahashi is the chef heading Sushi ii in Newport Beach, California, where the restaurant says he leads the sushi program and has studied under Master Chef Susumu Ii. He is a longtime Sushi ii chef with nearly 40 years of experience, focused on traditional Japanese technique and a kaiseki program that evolves the restaurant’s experience.
