The Path
At Sangencha in Kyoto and later as owner-chef at Shinohara in Shiga Prefecture, Takemasa Shinohara built a working vocabulary around discipline, memory, and instinct. Those early kitchens mattered because they established a method that was not based on copying precedent, but on filtering experience into plateable form. Since 2016, that approach has carried into Ginza Shinohara in Ginza, Tokyo, where the chef-owner role has given his cooking a fixed address and a clear point of view. “I can't imitate other people's cooking. So I turn my own experiences into food. My cuisine is country food,” Takemasa Shinohara says. Read as craft, the line is plainspoken: flavor comes from what a cook knows firsthand, and authority comes from making that knowledge legible at the table. The result is a style that values directness over display and keeps the work anchored in lived practice.
The Work Today
At Ginza Shinohara, the chef-owner role is less title than operating discipline. Since 2016, Takemasa Shinohara has centered the work on the daily management of the kitchen and dining room, with each service carrying the weight of accumulated practice. The restaurant’s setting in Ginza, Tokyo places the cooking in a polished urban district, but the method remains grounded in a more elemental register: memory translated through technique. That balance gives the current work its shape. Takemasa Shinohara’s cooking is built from experience rather than imitation, which keeps the food personal without making it theatrical. In the present tense of Ginza Shinohara, the point is consistency—holding a clear line from the chef’s own history to the meal in front of the guest.
Signature
Takemasa Shinohara’s signature dishes include Grilled Mochi with Karasumi, Deep Fried Chestnut with Dashi Sauce, Maguro Handroll, and soft shell tortoise. Taken together, they show a kitchen working with contrast: crisp and soft, rich and restrained, familiar ingredients handled with a steady hand. The list points to a cook who favors clarity in composition and lets the ingredient lead the structure of the dish.
In Their Words “I can't imitate other people's cooking. So I turn my own experiences into food. My cuisine is country food.”
