Formation
Range in a kitchen is built through repetition across stations, houses, and responsibilities. Thomas Pisha Duffly’s early work moved from cook at Bukowski Tavern to kitchen staff at East Coast Grill, then cook under Barbara Lynch at Sportello and cook under Barbara Lynch at The Butcher Shop. The progression continued with sous chef work at Hugo's in Portland, Maine (from 2012), leadership of the charcuterie program at Eventide Oyster Co., and the Chef de Cuisine role at The Honey Paw. Restaurant ownership requires a different register: menu identity, staff systems, pacing, and the discipline to make a point of view repeatable. Today, Thomas is chef-owner / head chef of Gado Gado (since 2019) and chef-owner of Oma's Hideaway (since 2021), carrying that layered kitchen path into restaurants known for precision, appetite, and personality. “I cooked Italian food most of my career in the kitchen.” Thomas has said.
