The Path

From 2008, Vailia From moved through the fine dining restaurant world, then into sales and brokering, importing, and the production side, building a career with a rare breadth of perspective. That sequence gave her a working view of wine from several positions in the chain: the pace of service, the demands of sales, the mechanics of brokering, the exchange of importing, and the hands-on realities of production. By 2009, that experience had become its own operation: she became owner and winemaker of Desparada Wines, a role she holds today. The path is defined less by linear progression than by accumulation, with each chapter informing the next.

The Work Today

Since 2009, From has led Desparada Wines as owner and winemaker. The work is anchored in making wine, learning through each cycle, and paying attention to land and environment: “We talk about a sense of place, terroir, community... Year by year trying to be more aware of taking care of our lands and environment.” That frame places the cellar in regular conversation with season and site, where each vintage brings new information and each decision carries weight. Her method sits between the practical and the philosophical: fermentation, place, and stewardship all in the same room.

Vailia's signature wines include Sackcloth & Ashes 2021 Central Coast, Carmen Sauvignon Blanc 2022 York Mountain, and Fortunata Falanghina 2022 Templeton Gap District. The range signals a cellar built with attention to site and variety, with each bottling carrying a specific origin rather than a decorative style.
