Valéry Mathis

Valéry Mathis has been the chef de cuisine at Erno's Bistro in Frankfurt am Main since 1995, where he is associated with a classical French haute cuisine style with South French influences. The restaurant’s own imprint/impressum lists him as Küchenchef, and multiple restaurant guides and features credit him with sustaining and elevating Erno’s Bistro’s reputation. Sources also note that he trained with Haeberlin, Troisgros, and Chibois before joining the restaurant.
