i. Biography
In the East Village, Regional Indian cuisine is the craft Vamshi Adi works in. Under his hands, it reads less like a category than a living archive: a way to keep Indian culinary traditions active inside a New York City restaurant. The work is grounded, deliberate, and shaped by memory, geography, and technique, with each plate treating tradition as something maintained, not frozen.
The Path
The foundations of discipline were laid at Culinary Academy of India in Hyderabad, India (2013–2016), where study and repetition formed the early structure of the work. Vamshi Adi then moved into professional kitchens as a Culinary Intern at The Dewberry in Charleston, South Carolina, a step that widened the field while keeping precision at the center of the job. The sequence of roles that followed marked a steady rise in responsibility. As a cook at Baar Baar in New York City, New York, and then as Chef de partie at Junoon in New York City, New York, the work continued to deepen around Regional Indian cuisine and the demands of fidelity in an American dining room. Later, as chef at Rooh in Palo Alto, California, the practice extended across cities without losing its focus. In 2021, Gazab opened in New York City, New York, with Vamshi Adi as founder. That title made authorship explicit. Today, as Executive Chef & Founder of Ishq, he carries both the day-to-day responsibility of the kitchen and the larger responsibility of the restaurant’s identity.
The Work Today
At Ishq in the East Village, the work centers on Regional Indian cuisine. The point is specific: distinct traditions of place are brought into the present with care, and the restaurant becomes a site where continuity is not a slogan but a working principle. The food is made to remember as it moves forward. Preserving and celebrating those traditions is his stated specialty, and the phrasing matches the work. Regionality, continuity, and discipline define the frame. The kitchen values lineage, attention, and the small decisions that keep a cuisine legible from one generation to the next. Executive Chef and founder are complementary titles at Ishq. One describes command of the kitchen’s daily rhythm; the other names the authorship behind the restaurant itself. Together, they place Vamshi Adi in charge of both execution and intent.
Signature
Vamshi's signature dishes include Gazab and Ishq. The names point back to the restaurants that have shaped his professional identity, linking his cooking to the places where his point of view has been made visible. Taken together, they read as part of a practice built around making restaurants as well as dishes.
Acclaim
The opening of Gazab in 2021 and the role of chef-founder at Ishq are the clearest public markers in Adi’s career. Those milestones map the work in sequence: first, the creation of a restaurant; then, the continuation of that authorship in a new setting. Seen across Baar Baar, Junoon, Gazab, and Ishq, the career is less a list of detached posts than a progression through Regional Indian cuisine as a craft of memory, geography, and responsibility. Each step adds another layer to that focus, with tradition treated as something to be carried carefully rather than repeated by rote.
