i. Biography
Working-kitchen formation, rather than a credentialed-school path, shaped the cooking of William Bradley, Executive Chef and Director at Addison in San Diego, California. The early instruction was practical and close to home: as a teenager in Bonita, the lessons came through prep rhythm, repetition, heat, timing, and attention. A small Italian restaurant in San Diego provided the first professional frame, followed by resort kitchens and work under James Boyce. Italian foundations, resort-kitchen polish, and the refinement gained under James Boyce formed the line that led to Addison. In 2006, Bradley became Executive Chef, taking on the role that would define the restaurant’s next phase and its identity.
Training and Lineage
Long tenure changes a restaurant differently than reinvention does. Since 2006, William Bradley has served as director and Executive Chef of Addison, building the house through continuity, repetition, and increasing precision rather than abrupt shifts in style. The cooking at Addison has developed around restraint, sequence, and finish. In the director and Executive Chef role, Bradley’s responsibility extends beyond individual plates to the full tasting-menu structure: pacing, progression, clarity, and the way each course sits inside the larger experience.
At Work Now
Addison’s current identity is tied to both role and place: Bradley is Director and Executive Chef at the restaurant, located at Fairmont Grand Del Mar, 5200 Grand Del Mar Way, San Diego, California 92130. California Gastronomy defines the cooking, with a tasting menu built around seasonal and locally sourced ingredients. The structure includes truffles, caviar, seafood, and meat courses, using luxury products within a regional frame rather than as decoration. Produce and place remain central to how the menu is composed. Bradley states the method plainly: "Obviously it starts with great produce, something that we’ve always focused on for many, many years. When we think about composing the dish, we think about the products and how to harmonize them to make something that’s special." The same position carries through in his description of the cuisine: "Our food has a lot of soul, so our cuisine is driven by the elements of taste and what we feel is special, so it doesn’t follow any trends or recipes of that sort. It’s very personal cuisine, so it has a sense of place."
Signature
The set points to familiar materials handled deliberately: artichokes, eggs and rice, and Kennebec potato chips, each moved into a more exact register without losing its recognizable base.
Peer Recognition
William Bradley has received James Beard Foundation Rising Star Chef award nomination. Addison’s public recognition includes Three Michelin stars for Addison (2022) and One Michelin star for Addison (2019). Those milestones sit alongside the longer craft record: Bradley’s continued work at Addison, the restaurant’s California Gastronomy, and a cuisine organized around product, place, and personal judgment.
