William Stuart

William Stuart is the founder and head brewer of Colorado Sake Co. in Denver’s RiNo Arts District, where the company says it became Colorado’s first licensed sake brewery and has brewed American craft sake. He is also described in local coverage as the business owner and as having worked at Matsuhisa Denver and other Japanese restaurants before entering sake production. Stuart has said he spent two years working with Colorado legislators to make sake brewing legal in the state.
