Wylie Dufresne built a New York career on a useful contradiction: cooking that stays technical without turning stiff, and playful without losing control. As chef and owner, he has moved through the city with an appetite for unusual forms, exacting execution, and plates that ask the diner to read structure as much as flavor. The Path
The foundation runs through Friends Seminary and Colby College, then into kitchens where pace and precision had to hold together under pressure. Wylie Dufresne’s early roles map a progression through New York and Las Vegas that sharpened the same concerns that would define his later work: technique, timing, and the willingness to push an idea until it held on the plate. He worked for Jean-Georges Vongerichten at Jean-Georges Vongerichten (1994–1999), then served as sous chef at Jean Georges in Manhattan (until 1999) and Head Chef at Prime at The Bellagio in Las Vegas (1998), before becoming first chef at 71 Clinton Fresh Food (from 1999).
