i. Biography
“I wanted to make a restaurant that represented our culture and traditions in the middle of where the best restaurants are,” says Yun Fuentes, the Puerto Rican chef and co-owner of Bolo in Philadelphia. The work reads on place as much as on plate: a restaurant set inside a dense dining market, built to hold Puerto Rican identity without turning it into a garnish. “Bolo would not be the same if it were in another space” keeps the point blunt. Location is part of the method.
The Climb
The line from Patria and El Zócalo in New York to Amada in Philadelphia shows a kitchen path built across rooms with different tempos and expectations. Yun Fuentes moved through those early stations, then worked at Tinto and Village Whiskey in Philadelphia, before advancing to sous chef at Amada / José Garcés restaurants in Philadelphia and later Head Chef at Amada / José Garcés restaurants in Philadelphia. The sequence matters: same city, multiple kitchens, one steady rise through the brigade. From there, the role widened. As executive chef at Alma de Cuba in Philadelphia and later culinary director at Milkboy in Washington Square West, Philadelphia, Yun Fuentes moved from running the line to shaping the broader kitchen program. Today, Yun is chef/owner of BOLO.
Today
The current work centers Puerto Rican identity as the organizing principle of the restaurant, not as decoration. In Yun Fuentes’s framing, “our culture and traditions” are what give BOLO its place in the city’s restaurant conversation. Place matters to him.
