    During Advocatuur's first guest shift, Maroš Dzurus worked bench-side with the Amsterdam team, close enough to read the room in service and close enough for the team to read his method. He now becomes director of bars and beverage at Advocatuur at Rosewood Amsterdam, taking the bar into its next stage as Yann Bouvignies moves into a wider Rosewood role. Dzurus brings nearly 20 years in drinks and hospitality from Himkok Oslo, where he was bar manager.

    Dzurus takes charge of the bar's creative direction. For guests, the move means future mixology programmes at Advocatuur Rosewood Amsterdam will be shaped by a maker who has already worked the room with the team, then returned to build the method behind the service.

    Advocatuur opened in May 2025. Dzurus's work now includes ingredient development, team training and service systems, the structure that lets a drinks programme be taught, repeated and sharpened by the team on the floor.

    From Himkok Oslo to Rosewood Amsterdam

    Dzurus had already worked with the Advocatuur team during the bar's first guest shift. That collaboration gives the appointment a piece of shared practice: the team has seen him on the tools, and he has seen the room in motion.

    "I am very much looking forward to making the move to Amsterdam to lead the team at Advocatuur," Dzurus said. "Over the past year, the team has cultivated a bespoke and inspiring drinks experience committed to heritage, culture and outstanding hospitality.     Yann Bouvignies and the EMEA Hand-Off

    Bouvignies moved from Scarfes Bar at Rosewood London to help launch Advocatuur. He is now corporate director of food and beverage, excellence, EMEA for the hotel group.

    The change separates the work of opening a bar from the discipline of developing it. Bouvignies carries the broader regional food and beverage brief; Dzurus takes direct responsibility for the bar's creative and beverage direction in Amsterdam.

    Future Mixology Programmes at Advocatuur

    Dzurus's focus includes work with local and seasonal ingredients, stronger development for the bar team, and closer attention to service, storytelling and technique.
