The cooking is seasonal where the seafood and produce allow it; the restaurant does not turn that into a fixed tasting format. The discipline here is choice, then restraint, then the heat of the pass.
The room works with Las Vegas brightness without letting the Strip become the subject. The counter and seafood display pull the eye first, a polished interruption in the dining room where the whole fish wait under glass and the fishmonger’s station becomes part of service. Around it, Amalfi keeps the feel of an upscale coastal Italian restaurant: a lively bar, a lounge suited to aperitivo, tables dressed for a business-casual room inside a large resort, and a pass handling pasta and fish with the tempo of an à la carte service. The sound is lively, but the craft is bench-side and visible. A diner can track the movement from counter to kitchen, from fishmonger to cook, from raw selection to plate.
Amalfi matters because it marks a specific turn in Flay’s Las Vegas work, from the grill language associated with his earlier years at Caesars Palace toward a seafood-led Italian Mediterranean restaurant. The public figure is familiar, but the place asks for attention at a smaller scale: the fish under glass, the pasta station, the Campania bottles, the handoff between fishmonger and pass.
