Night fruit for a high cellar

Grapes come in at night, before the Castilian sun can press its weight into the skins. Ignacio de Miguel, winemaker at Bodegas y Viñedos Nieva in Nieva, works from that first decision, keeping Verdejo and Sauvignon Blanc on a cool line in the Rueda DO. The winery was founded in 1989 to return attention to a village whose wine trade reaches back to the 12th century and the Carthusian monastery nearby. Its later chapter began in 2009, when Bodegas Martúe took it on and set the old vineyards inside a more technical cellar practice. De Miguel’s public biography gives little away about apprenticeship or predecessors, so the work here has to be read through the station itself: fruit picked cold, handled in stainless steel, and kept close to the mineral register of the place. The estate farms around 60 hectares, mainly Verdejo, with Sauvignon Blanc in the smaller share. Its signature inheritance is not a room or a label design, but ungrafted Verdejo vines, some over 100 years old, held in sandy ground where phylloxera did not take the same hold.

The method depends on altitude, sand and restraint in the cellar. The vineyards sit above 850 meters, with some parcels reaching 900 meters, in an extreme continental climate that pulls heat from the day and cold from the night. The soil is poor, sandy and strewn with round pebbles and cobbles; that ground matters because it helped preserve the pre-phylloxera vines that feed the Pie Franco wines. Of the estate’s 60 hectares, 54 hectares are planted to Verdejo and 6 hectares to Sauvignon Blanc. The remaining vines average 35 years, giving the cellar both old-vine concentration and younger-vine lift. After the night harvest, the bunches go into temperature-controlled stainless steel vats for cold maceration, then through pressing under inert atmosphere. Alcoholic fermentation runs for about 23 days at 13–14°C, a narrow band chosen for freshness and aromatic clarity. The wine rests on fine lees before clarification and cold stabilization at -4°C to -6°C, a practical step that keeps crystallization from appearing later in bottle.

The cellar and the village ground

The place reads as a working Castilian village winery rather than a polished visitor house. Outside, the vineyards sit high in the Comarca de Nieva, within Segovia, where snow, wind from the Guadarrama and dry summer light all leave their mark on Verdejo. Inside, the cellar keeps the tone plain: stainless steel, cold control, lees, and the repeated discipline of white wine made for freshness rather than weight. The tasting room belongs to that same register. It points back to the vineyard before it points to itself. The flagship thread remains Pie Franco, drawn from ungrafted vines in sandy soils, and the most concrete future here is still the next cool harvest of Verdejo from Nieva.
