Seventeen hectares, Pinot Noir led

Seventeen hectares before the cellar
The first decision is scope: Delphine Vesselle-LeMaire , winemaker at Champagne Jean Vesselle in Bouzy, works only from the 17 hectares she and her team cultivate. That boundary gives the house its discipline. Fruit comes from family-owned Grand Cru vineyards in Bouzy, with additional holdings in Loches-sur-Ource and Chouilly, and the cellar receives what the estate has grown rather than what the market can supply. Delphine carries the work with her husband David, continuing a line she ties directly to her ancestors and, in her words, “that of my dear parents.” The inheritance is active here: vineyard judgment, cellar timing, and the choice to keep origin narrow enough that each cuvée remains answerable to the ground. Champagne Jean Vesselle is a grower-producer estate with roots reaching back 300 years. It is the way continuity is handled at the bench-side of the vineyard and the cellar, season after season, without letting the family name become a static thing.
Pinot Noir held in relation
The estate’s method begins with Bouzy’s Pinot Noir. The vineyard mix is given as 90% Pinot Noir and 10% Chardonnay, a proportion that sets the house grammar before fermentation starts. Sustainable farming guides the work; the family practices lutte raisonnée, with organic methods and restraint in chemical treatments. In the cellar, the team uses a traditional basket press and vinifies most wines in tank, protecting clarity of fruit while keeping control over fermentation. Malolactic fermentation is started and allowed to continue for a minimum of one month before racking. The second fermentation in bottle takes five weeks, followed by riddling, storage upside down in the cellar, dégorgement, and dosage with a liqueur made from cane sugar and reserve wines from previous harvests. For Rosé de Saignée, Pinot Noir gives its color through brief maceration rather than the blending of red wine. The point is not uniform polish. Delphine has described the house’s particularity as harmonizing the specificities of each terroir, holding power, refinement, and finesse together without flattening their differences.
The cellar stays close to the vines
The room in Bouzy has the quiet of a family cellar rather than the theatre of a large house. Press, tank, bottles, and tasting are all kept close to the estate’s central work: expressing Grand Cru ground through fruit the family farms. The technical visit follows the manual tasks of Champagne production, so the sequence matters more than decoration: pressing, fermentation, riddling, dégorgement, then the glass. Production is described at around 145,000 bottles annually, still rooted in the estate’s own holdings. The portfolio keeps that range visible. Oeil de Perdrix Brut, a Pinot Noir rosé from Bouzy, sits beside L’Expression Nature Brut Nature, Rosé de Saignée Brut, Blanc de Blancs de Chouilly ‘B2C’, and Coteaux Champenois Rouge ‘Bouzy Rouge’. The close work remains Delphine’s: to keep the house aligned with the 17 hectares, one cuvée at a time, from Oeil de Perdrix Brut to Bouzy Rouge.
