Bouzy Parcels Beyond One Blend
- Falstaff Winery - 3 Stars · 2026
- Pearl 2 Star Prestige · 2025
Pierre Paillard's historic Bouzy vineyard covers about 11 hectares. Brothers Antoine and Quentin Paillard, eighth-generation winegrowers, have also developed wines from other Montagne de Reims villages since 2018, including Ambonnay, Ludes and Taissy.
Parcels and editions
Les Mottelettes is Chardonnay from a Bouzy parcel planted in 1961. Les Parcelles is a Bouzy blend; one published release based mainly on the 2020 harvest used 80% Pinot Noir, 20% Chardonnay and 20% reserve wine. The figures should stay attached to that release, because the producer also displays other base-year specifications.

Chalk cellars as part of the visit
At the Tasting Table takes guests from vineyard to 19th-century crayères and a four-cuvée tasting. Chef's Table adds a four-course meal. Both are booked through the estate, giving a direct way to compare the wines with the land and cellar behind them.

Brothers Antoine and Quentin Paillard lead the Bouzy estate as the family's eighth generation of winegrowers.
What can visitors book?
The house offers a Tasting Table vineyard-and-cellar visit and a longer Chef's Table format with a four-course meal; reserve in advance.
