Staff work in period costume, and baroque music sits under the meal rather than over it. The room is quiet. Fireplaces crackle; candlelight catches carved surfaces; the service style keeps the pace formal without rushing the pass. Beyond the dining room, the estate extends across nearly 20 hectares, with French gardens, terraces, old trees, the guard house, the Orangerie, former stables, and a deconsecrated chapel folded into the hotel’s life. Le Saint-Evremond, the bar, holds sixty Champagne selections, a detail that suits the house’s appetite for ceremony. Still, the kitchen’s best counterweight is clarity. Pestana’s plates do not need to outdecorate the venue in Reugny.
