Vineyard decisions carried into the cellar

The vineyard comes first for Ryan Roark, winemaker at Demetria Estate in Los Olivos, where Foxen Canyon fruit moves from biodynamic rows toward the cellar under the same set of hands. His title has widened with the work. He took over vineyard management at the estate in 2019, added the winemaker role in 2021, and by 2025 was director of viticulture and winemaking, a structure that keeps pruning, picking, fermenting, and blending in one line of responsibility.

Roark’s training sits close to the land. Texas A&M gave him the formal agricultural base; the Angers agricultural internship program in France and work at Domaine Taillandier in Savennieres put that base under another climate, another calendar, another pressure of season. He founded Roark Wine Company in 2009, then brought that practical sequence into Demetria’s estate work. The lineage here is not a named master handing down a cellar recipe. It is field study, French agricultural practice, and time on the tools in the Santa Ynez Valley.

Biodynamic rows, Rhône and Burgundian fruit

Demetria Estate works at small production, 6,000-9,000 cases annually, with a biodynamic philosophy across a hillside estate vineyard in the Santa Ynez Valley AVA. The varietal range gives Roark a broad bench: Pinot Noir, Syrah, Grenache, Chardonnay, Viognier, Roussanne, Marsanne, and Mourvedre. That is enough range to ask for different picking decisions and different cellar restraint, especially when red, white, and rosé wines all sit in the program.

The house is known for natural winemaking and for expressive Rhône and Burgundian-style wines, and its focus is organizational rather than decorative. Roark manages both vine and wine. A choice made in a Grenache block or a Chardonnay pick does not pass into another department; it follows him into the cellar, where barrel tasting and cellar tasting are part of how the estate reads work in progress. The method depends on continuity more than flourish. Fruit, timing, ferment, and blend stay close enough for the maker to feel the consequence of each decision.

The hillside as working room

The estate sits above Foxen Canyon, with a Mediterranean-style winery and vineyard views that pull the eye across the slope before it returns to the glass. The quiet matters. Demetria is not built around a loud tasting room rhythm; the setting is relaxed, outdoor, and picnic-paced, with the hillside functioning almost like another cellar wall. The vineyard is not a backdrop here. It is the visible source of the work being poured.

In that room, the program feels intimate because the distance between place and wine stays short. The tasting room, the cellar, and the vineyard share the same line of sight. Pinot Noir and Syrah come with the view of the land that raised them, while Viognier, Roussanne, and Marsanne keep the white-wine side of the bench in the same conversation.
