Cellar grammar carried to Los Olivos

James Sparks works in the cellar by repetition, reading timing before he reaches for intervention. As winemaker at Liquid Farm Tasting Room in Los Olivos, he brings that discipline to a room built around Chardonnay and Pinot Noir from Sta. Rita Hills. James Sparks came through assistant winemaking at Dragonette Cellars from 2009–2013, a stretch that gave him the basic grammar of the work: when to wait, when to move, and how many small decisions sit between fruit and finished wine. From 2013, his move into the winemaker role at Liquid Farm in Lompoc gave those habits a longer field. The Los Olivos title remains his, while Kings Carey sits alongside it in the same Santa Barbara County working geography. That matters here. Coastal light, cool evenings, and a measured cellar culture set the terms, and Sparks’s career has stayed close enough to those terms for the place to read through the wines rather than around them.

    Minimal handling, clear cellar lines

The program keeps its attention on still white and still red wines, with a natural production philosophy and a boutique scale. The house frames its work through terroir, organic sourcing tags, and minimal intervention, not through ornament. In Sparks’s own range, White Hill Chardonnay, Golden Slope, La Hermana, Four, and Rosé of Mourvedre mark the cellar language by label rather than by explanation. Each name carries a position inside the portfolio, and the shared discipline is pace: fruit handled with control, wines brought forward without asking the cellar to cover the site. The tasting room pours by flight, which suits that kind of reading. A flight lets the hand show in sequence, first in weight and line, then in the quieter decisions that shape texture.

A farmhouse room for slower tasting

The tasting room is farmhouse-style, sunny, and intimate, with the quiet that lets a glass hold its place on the counter. Los Olivos gives the room a village pace rather than a production-floor pace; the craft reaches the visitor through a curated flight, a small room, and the accumulated decisions behind the bottle. Nothing here needs spectacle. The setting is rustic without being staged, elegant without turning formal, and mellow enough for the wines to be read in their own order. In that atmosphere, Sparks’s work feels bench-side even when the cellar itself is elsewhere: the pour, the pause, the next glass, the return to acidity, texture, and finish.

    The title that still matters

Sparks once described his beginning plainly: “I’m very lucky and sort of just “fell into” the wine business.” The line sits lightly, but the path behind it has weight: Dragonette Cellars, then Liquid Farm, then Kings Carey alongside the Los Olivos post. The name to hold in the glass is White Hill Chardonnay.
