Domaine Le Bout du Monde

High vines, practical hands

Édouard Laffitte checks the fruit as vigneron at Domaine Le Bout du Monde in Lansac, where high, north-facing vines set the tone for the cellar. His route to this bench was practical before it was independent: cellar work at the Cave coopérative d’Estézargues in the Gard, then a period with Jean-François Nicq at Domaine des Foulards Rouges in Roussillon. By 2005 he had become vigneron here, in the Pyrénées-Orientales, building a domaine rather than inheriting one.

That matters in the glass because the work began with constraint. Laffitte has described the starting point plainly: “N’étant pas d’origine agricole, il fallait tout créer.” The choice of altitude and northern exposure followed from that construction. He wanted fruit, freshness and moderate alcohol, so he looked for sites that could give those things before the cellar had to correct them. The estate works as a small natural-wine domaine, rooted in organic viticulture, hand harvesting and wines left unfined. The lineage is not a family tree in the old sense. It is time spent in cooperative production, time beside Nicq, then time on his own vines in Lansac.

Three soils before the tank

The domaine’s 7.7 hectares sit across three communes, with granite arenas in Lansac, schist in Rasiguères and gneiss in Cassagnes. Syrah, Grenache, Carignan and Roussanne carry the work, mostly as red, rosé and a single white wine under Vin de France. Laffitte does not buy grapes for the domaine; the fruit comes from the estate’s own vines, picked by hand so the selection happens before the cellar receives the harvest.

Inside, the method stays low in force. Carbonic maceration takes place at low temperatures, with whole clusters fermenting through indigenous yeasts. The wines spend approximately three weeks in fiberglass tanks, without pigeage or pumping over. Some cuvées then move into 7-year-old 228-liter barrels for about seven months. Bottling is unfiltered and unfined, with only 1 milligram of sulfur per hectoliter added in some cases. Those figures tell the discipline better than a slogan would: whole fruit, little extraction, old wood, short élevage, as little correction as the vintage allows.

The old cooperative cellar

The place itself is an old cooperative cellar in Lansac, shared with Loïc Roure of Domaine du Possible. The setting gives the domaine its scale: rustic, quiet, more working cellar than tasting-room theatre. In the cellar, fiberglass, older barrels and hand work keep the room close to the fruit; outside, the vineyards rise on cooler exposures above the Mediterranean heat.

Le Bout du Monde names the edge, and the local phrase Jajakistan gives that edge a cellar address rather than a postcard view. The wines carry that position through cuvées such as Brave Margot, Tam-Tam, Hop Là, L’Échappée Belle, La Luce, Avec le Temps, Un Autre Monde and Funambule. If the next bottle changes with the season, the fixed point remains the same: Laffitte, the granite of Lansac, and the old cooperative cellar at Le Bout du Monde.
