Agave bottles pulled from the back bar
Freddy Andreasson reaches first for agave, not as a category to decorate but as the structure of the drink. As owner of El Gallo Altanero in Guadalajara, Freddy Andreasson has built the bar around small, independent tequila producers, rare raicilla, mezcal and other agave distillates, with the back bar doing as much work as the shaker. The Swedish-born bartender moved to Mexico in 2016, spent time inside the local agave community, and helped open El Gallo Altanero in 2018 with responsibly sourced spirits at the center of the room. The house knows him as El Güero, but the role is less about personality than custody: which producer to place in front of a guest, which bottle earns a cocktail build, which small edition should stay in a neat pour. The lineage here is not a named master and apprentice chain. It is proximity to Jalisco producers, repeated tastings, and the discipline of letting tequila, raicilla and mezcal arrive with their makers still attached.
A cocktail list that keeps moving
The program clings to classic architecture, then lets the ingredients pull it toward Mexico. A Sangroni keeps the Negroni frame of gin, Campari and vermouth, then brings in tamarind and watermelon. The Super Bueno Highball uses fresh strawberry for its red hue, with mezcal Arturo Campos, kari ancho, reesa tomate and carbonado giving the drink its agave-forward line. The Local Batanga Champagne sits in the same language of familiarity and reworking. Andreasson and the bar team change the menu every other month, and sometimes daily, drawing on hard-to-find agave ingredients, small producer tequila, raicilla from Jalisco’s southwestern corner, and mezcal with enough character to hold its place in a mixed drink. The room stays close to the work
The bar holds its craft in low light. Corners feel close, the back bar is within reach, and the open-air rooftop terrace looks over a courtyard while Latin beats move through the room. It has the ease of a dive bar without treating the bottles casually. That tension matters. A rare tequila can be poured beside a bright highball, and neither has to carry ceremony to be taken seriously.
