Rice, fish, and the space between courses
Every cut lands within reach of the counter as Masahiro Sugiyama, Head Chef at Hōseki in Dubai, works the omakase at Bulgari Resort Dubai. He has been based at the resort since 2017, after Tokyo sushi shops and an apprenticeship at Sushi Kanesaka, and he carries the form through repetition rather than display. Born into a long-established sushi family, with a sushi lineage spanning generations, Sugiyama treats the counter as the place where inheritance becomes method: rice touched at the right moment, fish cut to answer its grain, silence held long enough for the next course to arrive cleanly.
Hōseki gives that discipline a narrow field. The restaurant is built around counter dining, with 17 seats and a meal structure that leaves judgment in the chef’s hands. Sugiyama has described the standard in plain terms: “In omakase, trust isn’t earned with words- it’s earned with every cut, every touch of rice, every silence between courses.” The line suits the room. Nothing here asks to be enlarged by explanation. The guest sees the hand, the knife, the rice, the pass of one piece after another.
Japan by supply, Dubai by discipline
The program at Hōseki rests on traditional omakase, not a printed sequence. Sugiyama shapes each meal around the day’s ingredients and the seated guest, with fish flown fresh from Japan and a progression that can move through appetizers, sushi, miso soup, tamago, and a Bulgari chocolate finish. Published menus describe Hisui with 5 starters and 10 sushi, and Ruri with 7 starters and 12 sushi, but the force of the place is less in the tier than in the chef’s control of pace.
At the bench, the vocabulary is direct: fatty tuna cheek, monkfish liver, squid, seared octopus tentacles, nigiri, rice. The restaurant’s acclaim, including 1 Michelin star and 6 total awards, belongs to this address and this format, where distance from Japan becomes a logistical discipline rather than a theme. Sugiyama cannot lean on market proximity in Dubai, so the work depends on sourcing, timing, and refusal to loosen the form. The result is an omakase that keeps its line: no à la carte sprawl, no fusion argument, no unnecessary theatre.
A counter held in quiet
The room is minimalist and low-lit, set on the 4th floor of Bulgari Resort Dubai on Jumeira Bay Island, with the skyline held through large windows rather than pushed into the meal. The counter keeps the attention close.
Hōseki means “gemstone” in Japanese, and the name suits the scale without needing ornament. The restaurant works as a jewel box because Sugiyama keeps the room secondary to the pass. For diners who return to Dubai after eating widely elsewhere, his own measure remains the response to the sushi in front of them. At Hōseki, Masahiro Sugiyama sets down a piece of nigiri.
