The L’Atelier format puts the pass in view, with the guest close enough to read the finish on a glaze, the set of a velouté, the shine of a reduction. Cofini’s training inside the Joël Robuchon restaurant group began in 2014, a house where repetition is not background labor but the method itself: finish, restraint, control under pressure. He worked within the Paris L’Atelier from 2014, one of the rooms where that grammar is practiced at close range, before carrying the vocabulary to the Shanghai post. The lineage is not vague. Joël Robuchon built the workshop idea around visibility and contact, moving haute cuisine closer to the diner without loosening the discipline of the bench. Francky Semblat, executive chef from the Shanghai opening, had worked with Robuchon for 19 years and brought the group’s Macau and Paris habits into Bund 18. Cofini works inside that same frame: classic French luxury, handled in a way that lets the material stay legible.
The program at the Shanghai atelier favors the Robuchon register of concentration: caviar, foie gras, wagyu, emulsions, veloutés, glazed poultry, and the potato purée that has become a house test of patience. Cofini has described the mash plainly: “The secret is the energy and time the chefs put into making the perfect mash with just three ingredients: potatoes, butter and salt.” The point is not ornament. It is ratio, temperature, pressure through the tamis, and the willingness to repeat a gesture until the texture holds. Signature dishes named for the house include Imperial Caviar with King Crab and Wagyu Beef Rossini, both suited to a counter where luxury cannot hide behind distance. The Shanghai kitchen also folds local practicality into the French frame, using Chinese caviar and peas in dishes such as pea velouté with mint jelly and Parmesan cream. A langoustine ravioli with Château Chalon emulsion and Vietnamese mint shows another part of the method: a classic shellfish form, lifted by wine, herb, and the clean tension of broth and filling.
The room sits on 3F at Bund 18, the 1923 building facing the Huangpu River, and the atelier’s burgundy and gold palette does not try to disappear. It frames the work. Around the central open kitchen, 32 counter seats make the pass the center of gravity; 16 tables pull the room back into a more formal rhythm, with the Lujiazui skyline beyond the glass. The counter is the better lesson in the house style. A chef plates within reach, a sauce is finished under quiet light, a server reads the pace without turning the room loud. Cofini has said, “L’Atelier is rooted in interaction and fun with the guests while producing the very best food, which I love and brings me joy.” In Shanghai, that interaction stays measured. The room remains quiet enough for the work to set the tempo.
The wine program gives the atelier another bench of its own. Arneis Wu’s sommelier work earned Best Restaurant Wine List by Sommelier’s Choice in 2019, and the list entered China’s Wine List of the Year Hall of Fame in 2018. The emphasis sits with French depth, from by-the-glass and carafe choices to bottles built for caviar, foie gras, quail, and reduction. Nothing here asks the cellar to outshine the kitchen. It keeps pace with the pass, one pour at a time, beside Imperial Caviar with King Crab.
