A blend led by Cabernet Franc

Cabernet Franc sets the first decision: at Le Dome in Saint-Emilion, Jonathan Maltus works as winemaker around a blend led at 80%. That proportion gives the bench its discipline. Merlot is present, but the line of the wine begins with Cabernet Franc, a choice that sits against the common right-bank habit of letting Merlot take the lead. Maltus has held the winemaker role here since 1996, alongside ownership and proprietorship, so the decisions at Le Dome do not pass far from the person answerable for them. His career in Saint-Emilion also includes Château Teyssier, which he has owned since 1994, but Le Dome is the place where that long local footing meets a separate estate and a narrower focus. He has described his method in practical terms: if an intervention improves the wine, he accepts it. The sentence matters because it does not dress the work as doctrine. It leaves room for judgment, trial, and the refusal of ornament when ornament does not earn its place in the bottle.

The long control of one station

Le Dome works in Saint-Emilion Grand Cru, making still red wine from Cabernet Franc and Merlot. The house presents its production at small scale, and that scale suits a winemaker who keeps ownership, proprietorship, and the cellar decision in one set of hands. The published profile of the place does not give fermentation temperatures, élevage length, barrel regime, or vineyard measurements, so the most precise technical fact here remains the blend itself: 80% Cabernet Franc, with Merlot completing the frame. That number carries a great deal. It points to aromatic lift, structure, and a different pressure on picking and extraction than a Merlot-led program would ask. The stated production philosophy is conventional, which at Le Dome reads less as a slogan than as a working boundary: use the tools that serve the wine, keep the result accountable to the glass, and return to the same questions each vintage. Maltus received an OBE in 2016, but the more relevant measure inside this place is his time on the tools at Le Dome since 1996.

The dome above the cellar

The building changes the tempo before the tasting begins. Foster + Partners designed Le Dome as a dome-shaped winery set into the vineyard landscape, a modern form held low against the rolling hills of Saint-Emilion. It is not a farmhouse cellar dressed for nostalgia. The room asks for quiet attention: the curve of the architecture, the vineyard outside it, the private tasting format, and the small scale of the program all narrow the focus toward the wine rather than a parade of labels. In that setting, the cellar and tasting room feel joined by a single argument. The architecture may be the first thing the eye registers, but the work keeps returning to Cabernet Franc, Merlot, and Maltus’s judgment at the estate.
