Provençal plates under French discipline

Mise en place before the valley light
The reductions come before flourish. Cyril Mendes, Chef at Le Mas des Herbes Blanches, works in Lieu-dit Toron with the order of a French kitchen trained to hold its nerve. Hôtel Ritz gave him the foundation: repetition, exactness, the quiet authority of mise en place. He later worked as second d’Hervé Briffaud at Hôtel Méribel Megève from 2001–2003, then moved through seasonal resort kitchens at Palace des Neiges in Courchevel and Les Loges Blanches Resort in Megève, places where service compresses and the mountain sets the pace. From 2011, his chef role at Le Mas d’Artigny & Spa in Saint-Paul-de-Vence brought a Provençal vocabulary closer to the center of his work: ripeness, herbs, lightness, balance, and the discipline of leaving good produce unforced. Here, within a former Provençal farmhouse remade as a Relais & Châteaux house, that training has to meet another kind of pressure. The room asks for calm. The plate still needs structure.
Provence held in smaller courses
Mendes’s cooking belongs to a French restaurant frame where progression matters more than display. In that register, the smaller course has work to do. It carries temperature, contrast, acidity, and appetite without exhausting the meal. A sauce cannot lean on volume; it has to be reduced cleanly. A garnish cannot wander; it has to answer the main product. The Provençal setting sharpens the risk of overstatement, because the surrounding country already supplies force: ochres at Roussillon, the Lioux cliffs, the Luberon massif, the herbs and sun that can turn a plate heavy if the hand presses too hard. Mendes’s craft sits in calibration. Enough detail to reward attention. Enough restraint to let the season remain legible.
A house of pale rooms and long views
The house keeps a quiet pitch. There are 48 rooms and suites, treated in whites and grays, with boutique furnishings, red accents, Carrara marble in the suites, terraces, and the kind of light palette that gives the landscape the stronger voice. The old mas sits on Joucas territory near Gordes, looking across the Luberon Valley; the view is not a backdrop so much as a working condition. It follows guests from the room to the counter, from the gardens to the dining room, and it changes the tempo of service. A kitchen in this setting cannot hide behind noise. The floor is calm, the spa atmosphere is hushed, the gardens pull the day outward. Against that stillness, the pass has to stay exact.
The next season returns to the mas
The property has named its 2026 season from April 24 to October 11, a useful reminder that this is a nature-attuned house rather than an always-on urban address. When the doors reopen, Mendes’s work will again have to meet the same measure: Provençal produce, French discipline, and the long view from Le Mas des Herbes Blanches.
