His formal grounding came at Charles Sturt University, where technical study gave structure to a practice that has stayed close to the tools.

Nadeson has described the work in blunt terms: "It's my blood, my sweat, and not what I paid someone else to shed for me." At Lethbridge, that sentence reads less like a motto than a condition of the place. Pinot Noir and Chardonnay sit at the centre of the bench, not as fashion but as the varieties around which the cellar has kept returning. Dr Nadeson Riesling, Allegra Chardonnay, Between Five Bells, il Modo, and Nadeson Collis widen the frame, yet the discipline remains the same: a small winery working with sustainable intent, cool-climate fruit, and a maker who has kept his name attached to the decisions inside the cellar.

Basalt, limestone, and a cool hand

The estate sits on ancient seabed soils of basalt and limestone, a geology that gives the wines their ironstone line and tannin structure. That is the useful fact here, because Lethbridge is not built around volume. It is a small-scale cellar, more concerned with age-worthy single-vineyard wines than breadth for its own sake. Pinot Noir, Chardonnay, Shiraz, Riesling, Merlot, and Gamay all pass through the program, along with still red, still white, rosé, and sparkling work.

The method is sustainable, but the word matters only when it touches the work. In the Moorabool Valley, that means reading a cool-climate vineyard with restraint, keeping enough clarity in the fruit for site to carry through, and allowing structure to sit beside freshness. The house does not spell out every cellar movement in public, so the more faithful reading stays with what it does state: single-vineyard focus, basalt and limestone beneath the vines, and wines made with the patience to hold shape in bottle.

A cave tasting among olive trees

The room at Lethbridge has the quiet of a working vineyard estate rather than the polish of a showroom. Olive trees and rolling vines hold the edges of the property; historic structures give the place a worn-in register. The hospitality is relaxed, the atmosphere rustic, and the views do not need arrangement. They are already part of the work.

Inside the tasting room, the cellar remains close enough to feel present. A cave tasting suits this address because the wines are not detached from the ground that made them. Basalt, limestone, cool air, and the maker’s hand belong in the same sentence here.
