    Pasta in the front window

Pasta hangs in the shopfront window before service at Little Hollows Pasta in Redland, Bristol, where Chris Davis, the self-taught owner-chef, still shapes it in view of the street. Little Hollows grew from a market stall and home delivery service into a fixed neighbourhood restaurant on Chandos Road, opening on 25 September 2021 after five years of development. The house has kept the original gesture visible: sheets and shapes made in the morning, hung where passers-by can see them, then cut, filled, boiled, sauced, and sent into a small room built for pasta rather than theatre. That visibility is the whole argument, a street-food habit carried indoors.

    Six pastas, made daily

The craft here is fresh pasta with a narrow field of decisions. The menu usually turns around six pasta types, with vegetable-centric plates carrying much of the weight and meat or fish used sparingly, often as one dish each rather than as the centre of the house. Agnolotti has appeared with roasted tomato, mascarpone, roasted garlic, fior di latte, and herbs. Casoncelli has carried roast celeriac and Parmesan into honey, butter, and pickled walnuts. Tagliolini has taken prawn-head sauce, chilli, basil, and a butterflied prawn; shellfish spaghetti sits among the house signatures. The method is not hidden behind a long format. There are small plates, a few antipasti, pasta as the main discipline, and Italian desserts such as pistachio tiramisu or affogato to close the meal. The Michelin Bib Gourmand sits naturally beside that structure because the value is in the handwork, not in a long procession of courses. The pasta is made in house each morning, then cooked to the point where the sauce and shape have to meet cleanly. A filled pasta asks one thing from the bench; a long strand with shellfish asks another. Little Hollows lets those differences show.

Rough wood, bare tables, drying sheets

The room keeps close to the work. Rough wood floors, bare tables, salvaged chairs, high shelves, trailing plants, and wine bottles give the place a lived-in register rather than a polished dining-room finish. The pasta in the window is the strongest piece of furniture because it tells the room what it is for before a plate lands. The drinks follow the same compact logic: a modest list built mostly around Italian and French wines, with Bristol beer from Left Handed Giant and Lost and Grounded, and chalkboard nods to local producers such as Corks of Cotham. Service is described around knowledge rather than ceremony, the kind of small room where someone can explain a filling, a sauce, or why a particular glass sits well beside butter, prawn head, chilli, or tomato.

    What stays in the window

Little Hollows matters because its permanence came from the long way: stall, delivery, then a room where the same product could be made in public each day. It entered the Michelin Guide in 2022, one year after opening. Bristol has plenty of places to eat Italian food, but fewer that narrow the frame this tightly around the pasta bench, with agnolotti, shellfish spaghetti, and pistachio tiramisu doing the quiet work from the Chandos Road window.
