Keith Batt set the method around barley before the glass, as founder at Nant Distillery (Bothwell) in Bothwell, Australia. Keith Batt and Margaret Batt bought the historic Nant estate in 2004, taking on an old water-driven flour mill and the work of returning it to use. The education in the background includes The University of Queensland, but the discipline that matters here sits closer to the ground: stone, timber, water, grain and stills.

Batt’s role at Nant was not only to make a whisky label. He founded Nant Distilling Company in Tasmania and served as director of Nant in Bothwell until 2015, shaping the estate as a working whisky house rather than a room attached to a brand. The restored and extended mill joined production to reception on the same site, with a distillery, tasting room, atrium lounge and whisky bar held within the Bothwell property. The predecessor, in this case, was the mill itself. Its earlier purpose did not disappear; it gave the whisky its working grammar.

The estate method carried through the mill

Batt described the sequence plainly: “We grow our own barley, malt it, mill it, brew it, distill it on site.” That sentence is the house method in order. Barley does not sit apart from milling; milling does not sit apart from brewing; brewing does not sit apart from the still. Nant’s single malt whisky under Batt was built as an estate-style process, with the old flour mill folded into the production vocabulary rather than treated as scenery.

The equipment gave the spirit its line. Batt said the distillery used a spirit still with an onion-shaped neck, creating more reflux, a longer distillation and a very fine, light spirit. The house’s unpeated single malt, bottled at 43% ABV, sits in that lighter register: sweet cereals, vanilla, clove, fruit cake, apricot and nashi pear, followed by barley-sugar and almond-biscuit length. Nant Single Malt Whisky American Oak Bourbon Wood became the sharper public marker in 2012, when Jim Murray scored it 95.5 out of 100. The number belongs to that bottle, not to the room in general.

The work at Bothwell reads as a conversion rather than an insertion. The still house, along with the rest of the public spaces, extends from the same estate logic, so the public face of Nant remains close to the production body. Grain, mill and glass share the site. That closeness matters in a distillery because whisky asks for separations, then insists on continuity: malt from mash, wash from spirit, cask from bottle.

At Nant, the old water-driven flour mill gives those separations a physical memory. The place began with a practical act, a restoration, and Batt’s craft record is tied to that act as much as to any single release. At Nant, the bottle sits with barley, malt, mill, brew and the Bothwell still.
