Sorting before the cellar speaks

Vincent Rapet judges the fruit before the cellar has its say, working as winemaker at Rapet in Pernand-Vergelesses. Vincent Rapet runs Domaine Rapet Père & Fils with Sylvette, inside a family line whose name appears on a wine-taster document from 1765. The continuity matters here because Pernand-Vergelesses is not an abstract address. The village sits at the foot of Corton hill, in the green fold between the Côte de Nuits and the Côte de Beaune, and the domaine works across the local grammar of Chardonnay and Pinot Noir.

Rapet’s station is inheritance made practical. Robert and Roland belong to the preceding family line, and Vincent’s charge is not to repeat them as a museum would. He keeps the estate legible through harvest judgment, cellar restraint, and the patient renewal of a house identity vintage by vintage. The domaine farms about 18-20 hectares across Pernand-Vergelesses, Savigny-lès-Beaune, Aloxe-Corton, and Beaune, with particular weight around Corton and Corton-Charlemagne. Those names ask for control. Power has to be held in line; minerality has to register without being forced.

Low yields, small boxes, no hurry

The method begins in the vineyard, where the domaine works under High Environmental Value certification and a sustainable discipline that became formal in 2018. The estate pursues low yields, given as 20 to 40 hl/ha, through short pruning, minimal organic fertilization, and leaf-thinning. The soils are tilled, ridged, and ploughed between the vines, avoiding herbicides. Parcel-by-parcel amendment reduced fertilizer use by 50% in 2018, a figure that says more about the method than any broad claim could.

White grapes are harvested in small boxes to keep the bunches intact before pressing. Chardonnay carries most of the white program, with Bourgogne Aligoté standing apart; Pinot Noir carries the reds. In the cellar, fermentation lasts approximately 15 days, with regular punch-downs for extraction. The barrel program uses 20% new oak, enough to frame the wine without taking the place of the site. Drawing off without pumps belongs to the same instinct: less disturbance, more fidelity to the fruit that arrived at the door.

The valley below Corton

The place keeps the scale of a Burgundy family domaine rather than the polish of a destination built for spectators. The cellar and tasting room sit within the village core of Pernand-Vergelesses, close to vines and stone, with Corton above the daily work rather than far off in the story. It is quiet there. The room carries the feel of a winegrower’s house that has updated its tools without smoothing away its working edges.

That restraint suits the wines. Rapet’s reds and whites are not made to blur their origins into house style alone; they move among appellations, parcels, and the discipline of élevage. The same hands that sort fruit and choose extraction also decide how much oak the vintage can bear. In this cellar, the long line from 1765 ends, for now, at a glass of Corton-Charlemagne.
