    Dough carries time before it meets the wood fire at Renzo in North Central, Charleston, a neighborhood room on Huger Street with a baker’s sense of fermentation behind the pizza. The pizza does not read as a flatbread dressed for effect. It begins with the bench, the heat, the chew at the rim, and the restraint to let char, acidity and toppings arrive in sequence. The format is conversational rather than grand: wood-fired pies, natural wine, small plates, and a menu that leaves room for miso, Roman references and specials when the kitchen wants to move. The pass has to serve both the regular who wants a Margherita and the table willing to follow lamb, mint and zhug onto blistered dough, which is a wider brief than a pizzeria usually carries.

    Charred crust, cured fish, sharp greens

    The menu gives roughly half its space to pizza, then uses the rest to keep the palate awake. The Shabazi is the clearest statement of method: a charred, chewy crust with vinegary tomato sauce, ground lamb, parsley, mint, purple basil, yogurt and zhug, the Yemenite hot sauce built from garlic, parsley, cilantro, olive oil and Thai bird chiles. The pizza works because the dough has enough structure for heat and acid. It bends, then pushes back. Other pies take a more playful line, including Johnny Tsunami, a Hawaiian-leaning pizza, and Wrath of Kahan, built with medjool dates. Around them, the small plates do the sharpening. Boquerones wrap vinegar-cured anchovies around pink grapefruit, then take olive oil and black pepper. Roasted radishes meet kefir ranch and preserved lemon. The Caesar uses kohlrabi, celery and little gem, with anchovy dressing, pumpkin seeds, sesame seeds and grated cured egg yolk. Sunburst trout conserva turns oil-cured fish, crème fraîche, parsley salad and house poppy seed-salt crackers into a table-built dish. The craft is not only in the oven. It is in curing, cutting, dressing and knowing when bitterness should stay bitter.

    A small room with a loud pass

    The room at Renzo keeps the scale close. Service moves with the ease of a neighborhood place rather than the choreography of a formal dining room, and that matters when the food asks a table to trust grapefruit with anchovy or lamb with yogurt on pizza dough. Staff knowledge has been part of the restaurant’s reputation, not as a speech at the table, but as the bench-side fluency that lets a server explain zhug, steer a natural wine choice, and get out of the way. The atmosphere can get loud when the room fills, especially around happy hour, but the noise belongs to the size of the place. It is intimate enough that the fire, the counter and the pass remain part of the meal’s texture. The natural wine program gives the food its other register: acid for cured fish, lift for char, and a little wildness beside the Shabazi.
