The format is built on compression. Malai Chicken Bruschetta, Wagyu Pathan Kebab, Paneer Tikka Masala, Prawn 65 Wai Wai, and Aamras Cheesecake each have to land fast, with enough clarity to read in a sequence of small plates rather than as a single course carried by ceremony. That is harder than a tasting menu in one respect: there is no build, so every plate has to make its whole argument on arrival.
The house belongs to Tresind Group, the company behind Tresind, Avatara, Carnival by Tresind and the two-starred Tresind Studio, and the Dubai Hills address works in the group’s progressive Indian register without becoming a formal tasting room. The stated idea is that every moment of the day carries its own mood and story, which is a loose enough brief to allow a menu described as a gastronomic passport, fusing Indian elements with references from the USA, Mexico, China, Spain, Italy, Thailand, South Korea, France, Japan and the UAE.

The room is relaxed and L-shaped, modern without requiring stillness from the diner. Three TV screens carry sport, music keeps the room moving, and the counter energy belongs more to a lively bar than a hushed dining room. That setting suits the food. Small plates need reach, not reverence; they pass across the table, break sequence, return to the centre, disappear. In Dubai Hills Estate, Revelry reads as a neighbourhood room with a sharper kitchen behind it, a place where the bar program and the pass share the same appetite for colour and timing.
