House pasta, pinsa, and guanciale
The method announces itself in the classics. Cacio e pepe brings handmade tonnarelli, pecorino Romano, and black pepper into a dish that has nowhere to hide. Carbonara carries smoked guanciale, rich enough to hold the plate, light enough not to collapse it. Boscaiola sets rigatoni with mushroom, onion, Italian sausage, and either cream or tomato. Sacchetti folds Italian cheeses with fresh pear and gorgonzola, a softer gesture, still within the same table grammar.
