Site before cellar

A vineyard decision comes first for Brian Croser, winemaker at Tapanappa in Piccadilly Valley, before cellar work begins. His practice has long treated the vineyard as the starting point, not the background, and Tapanappa carries that discipline at the foot of The Tiers Vineyard, the oldest vineyard in the Adelaide Hills, planted in 1979. The work belongs to a South Australian career shaped by Petaluma and continued here through terroir-driven wines, where variety, site, viticulture, and restrained winemaking sit in one line of thought. Croser has described the labour plainly: “I have spent 40 years choosing distinguished vineyard sites, planting them with the right variety, refining the viticulture and the winemaking, and enduring the swings and roundabouts of the third-party critical assessment of the wines.” At Tapanappa, that sentence reads less like memory than method. The choices begin in the rows, with Chardonnay, Pinot Noir, and Riesling asked to carry the character of Piccadilly Valley rather than a cellar signature imposed over it.

The Tiers as a working argument

The standout fact at Tapanappa is not a trophy wall. It is The Tiers Vineyard itself, planted in 1979 and still central to the house’s Burgundian-style Chardonnay. Croser’s own language around vineyard investment gives the scale of the wager: “This as they say, has become bigger than Ben Hur. What it does demonstrate is that when making 50 year plus investments in vineyards, it is paramount to get the choices of site,variey(ies) and clone(s) right.” The grammar is practical and unforgiving. Choose the wrong site, the wrong variety, the wrong clone, and no amount of cellar correction will make the place speak cleanly. The production philosophy here is sustainable and small in scale, with still white wine at the centre of the program. That does not narrow the work; it sharpens it. Piccadilly Valley Chardonnay has to hold fruit, acidity, and origin in balance without losing the hand that farmed it. Pinot Noir and Riesling sit nearby in the same discipline, each one a different test of whether the vineyard remains legible after fermentation, élevage, and time.

A quiet cellar door under the vineyard

The cellar door sits with the vineyard outlook in front of it and Mt Bonython in view, a spacious room that lets the tasting stay close to the land without making a performance of it. The atmosphere is relaxed and quiet; the room gives visitors time to read the wines against the slope, the valley, and the weather moving across Piccadilly Valley. This is not a place that needs noise to announce its seriousness. The counter, the glass, and the view do enough. Awards sit elsewhere as numbers; inside the room, the line between vine and bottle is held over time by one maker’s insistence that origin comes first. Tapanappa: The Tiers Vineyard is still the noun that carries the house, with the Chardonnay.
