    Hand rolling before the kettle

    The program is built around a few decisions that leave little room to hide. The flour is natural, unbromated and unbleached; the malt gives the dough its quiet sweetness; the kettle sets the skin before the bake. Zucker's seeds its bagels generously on both sides, a small act that changes the sandwich in the hand. The texture is busy without becoming theatrical.
