i. Biography
Angela Lai is the pastry chef at Taïrroir in Taipei, Taiwan, where she joined after being invited by chef Kai Ho in 2015. She was named Asia’s Best Pastry Chef 2021 by Asia’s 50 Best Restaurants, becoming the first person in Taiwan to receive that honor. She is singapore-born, and she develops desserts using Taiwanese ingredients and French technique.
