i. Biography
Arturo Enciso is the co-founder and baker behind Gusto Bread, a Long Beach, California panadería established in 2017 and later expanded into a storefront bakery in 2020. He taught himself to bake by reading books and practicing with a wood-fired oven, and Gusto Bread became known for slow-fermented sourdoughs, conchas, and a California/Mexican baking philosophy rooted in heritage grains and nixtamalized maize. Gusto Bread was a James Beard Award finalist for Outstanding Bakery for the second consecutive year.
