Coming Up
Training with the Court of Master Sommeliers gave Cassandra Felix an early framework for the work: structure, recall, and discipline on the floor. That foundation ran alongside her time at Palm Beach Atlantic University, where the start of her hospitality career was already taking shape. In Palm Beach, The Breakers Palm Beach became the first proving ground for that training. As sommelier in 2010, Cassandra Felix worked in a dining room defined by formality and high expectations, where service depends on technical control and a steady manner. By 2015, that work had expanded into Lead Sommelier & Beverage Manager of Flagler Steakhouse at The Breakers in Palm Beach, a role that extended from wine service into broader beverage oversight. The move to New York City placed Cassandra Felix in a faster register of service at Centurion New York, where she joined as an Opening Team Member and Head Sommelier. Building from the ground up asks for organization as much as palate; the room has to be shaped before it can be run. She now works as sommelier at Daniel in New York City, carrying forward experience built across each room and each title.
