The Ascent
Cantonese kitchen formation often starts below the stove line, where repetition, prep discipline, and service rhythm come before authorship. Chan Yan-tak built that base first as a kitchen worker at Dai Sam Yuen restaurant in Hong Kong, then as a cook at Fook Lam Moon in Hong Kong. The hotel kitchen added brigade structure: at the restaurant at the Regent Hotel Hong Kong in Hong Kong, he served as sous chef (1984–1985) before becoming executive chef there (from 1985). The same craft line continues in a contemporary luxury-hotel setting, where Chan is Executive Chinese Chef of Lung King Heen, Four Seasons Hotel Hong Kong (since 2002). “I just carry on doing what I do every day and what I enjoy, and that is cooking good food for people.” Chan has said.
The Current Work
Cantonese cuisine at Lung King Heen is read through seafood and dim sum, two areas where product handling, heat control, and finishing restraint are exposed rather than hidden.
