i. Biography
Charles Wong is the owner and pitmaster of Umamicue, a Chicago barbecue concept that established a residency at Spilt Milk Tavern in Logan Square in 2023 and later expanded to Little Victories in June 2024. A self-trained chef with a background in finance, he started Umamicue as a side hustle in 2016 before turning it into a permanent restaurant presence. In January 2025, he ended the Spilt Milk residency as Umamicue moved to Sterling Food Hall in Chicago’s Loop.
