i. Biography
San Diego-born and raised, Christian Pineda came into restaurants through design and ownership, moving between the back of house, the dining room, and the plans that connect them. That dual position — architect and client in his own account — shaped how he approached hospitality: as a built environment, with decisions that have to hold up in use.
The Climb
Architecture gave Christian Pineda a working method before hospitality gave him a platform. At Randall Lamb, the draftsman’s job was measurement, planning, and translating an idea into a form that could be built. At Colkitt&Co, as an Associate Architect, that discipline carried into larger decisions about structure, detail, and execution. By the time he moved into restaurants, the habit was already there: treat a concept as something that has to function in the real world, not just on paper. Today, he is co-founder of Los Tacos No. 1 (since 2012), co-founder of Los Mariscos (since 2016), and co-founder of Grupo Watchale. Read that progression as a transfer of skills rather than a switch in industries: the same attention that goes into a plan, a site, and a finished space also shows up in how a concept is shaped, repeated, and held to a standard.
Today
His own account is direct: “We had no romantic attachment to the restaurant world on its own, and we’re not chefs, but we had an educated palate.” That line explains the work as much as any longer biography. Taste, judgment, and design sit ahead of nostalgia or pedigree, and Christian Pineda’s role is built on making choices that turn those instincts into places people recognize and return to.
Signature
Christian's signature dishes include tacos adobadas and Los Tacos No. 1. That pairing says a lot about the work: one item grounds the craft in a specific preparation, while the other names the broader concept he helped build. Together, they point to a practice that is exact in detail and scalable in format.
In Their Words “The idea was not only to bring an authentic tasting taco to New York but to also bring an experience from Tijuana that many New Yorkers had never seen.” “This project is very special to me because it’s the first project where I played the role of the architect and the client.”
Recognition
The work is defined by a clear intersection: design thinking, owner-side decisions, and the effort to bring an authentic tasting taco and a Tijuana experience to New York. Christian Pineda’s profile sits in that overlap, where architecture becomes a tool for hospitality and a restaurant becomes something that has to be designed, not just opened.
