Dave Irwin

Dave Irwin is the co-founder and distiller behind Patient Wolf Distilling Co. the Melbourne gin producer founded with Matt Argus. Sources place him in Brunswick in the company’s early years and later at the brand’s Southbank distillery and public bar, where he has been described as founder, head distiller, and managing director. He helped develop Patient Wolf from a home-still project into a recognized Australian craft gin brand, including the launch of new spirits such as Blanco Wolf.
