i. Biography
The path into spirits runs through family wine work for Dave Withers, who has described it plainly: “My dad was a winemaker, my grandfather was a winemaker. Wine was prominent for me in my early years – it was in my blood.” That lineage is the useful fact here. It places flavour knowledge in the household before it reaches the workplace, and it explains why spirits can read as a continuation of that inherited attention rather than a detour from it.
The Climb
Dave Withers trained at Wine & Spirit Education Trust before moving through spirits in a sequence that tracks both commercial and technical responsibility. The progression is clear enough: Sales Manager at Alba Imports (2013–2014), Production Manager at Archie Rose Distilling Co. (2015–2017), and Master Distiller at Archie Rose Distilling Co. (2017–2023). Each step widened the brief, from the market side of the category into production and then into the control of distilling itself. From 2023, he has served as head of operations (Master Distiller) at Archie Rose Distilling Co, a role that combines oversight with the day-to-day demands of making. He has also taken board-level responsibilities: Member Board Of Directors at Chartered Institute of Brewers and Distillers (CIBD) (from 2021) and Board Member at Australian Distillers Association (2024–2025).
