The Climb

Working as a distiller at Cape of Storms Distilling Company until 2021 gave Dylan Meiring the sort of formation that comes from repetition, not shortcuts. Distilling at that level builds judgment batch by batch, with technique learned through doing and through paying close attention to what each run teaches. The change in title keeps the work inside the same framework: attention, technique and patience, now carried from a different position.

Today

Cape Town remains the point of return in Dylan Meiring’s work. “We are very excited to be bringing Cape Town its very own craft rum,” he has said, making the claim in local terms rather than as an imported style rebranded for a new market. The focus is plain: rum made to belong to the city that shapes it. The reach is broader, but it still comes back to process. “Our goal is to bring ideas from around the world together to create beautiful rums like no other.” That is a trade-minded statement of method: sources can be global, but the test is whether they can be translated into something tangible in the still and in the glass.

Signature

Dylan's signature wines include The Great White Rum and Fyn Botanical Rum. Together, they mark the range associated with the name: one expression direct and assured, the other with a more layered botanical profile, both carrying the same measured approach.

Recognition

For a distiller working in a young category, the clearest recognition is often tied to the bottle itself. In a field still refining its own language, the work is judged by what it produces, and the named spirits carry that judgment plainly.
