Coming Up
Formal training at culinary school in Israel gave the work a technical base; service as driver and cook at Israel Defense Forces in Israel added the discipline of cooking under pressure, movement, and practical constraint. In Einat Admony’s kitchens, that background shows up as food built for service conditions: direct, resilient, and organized without losing feeling. Restaurant-building in New York City became the proving ground for format. In the West Village, New York City, Admony worked as chef-owner at Bar Bolonat, placing the cooking inside a full-service restaurant frame. As owner at Kish-Kash in New York City, she continued to work with the textures, aromas, and emotional charge central to her repertoire. Television added another pressure system: as contestant and judge at Chopped, speed and judgment became visible parts of the mise en place. Performance entered the same working vocabulary when Admony became comedian / performer at Comedy Cellar in New York City (from 2019), carrying timing and candor into another room. Cookbook authorship required the food to hold instruction, voice, and context without the support of a dining room; as author at Artisan Books (from 2013), Admony put that cooking into print. Competition remained another register of timed work when she entered as competitor at Guy Fieri's Tournament of Champions (2022). The current body of work is broad but legible: founder of Taïm (since 2005), chef-owner of Balaboosta (since 2010), contributor of Epicurious, chef of CookUnity, host of Nine Chefs, One Table, and chef-owner of Moondog HiFi (since 2024). The formats differ—falafel, full-service restaurant, media, prepared meals, hosted table, and a room built around food and atmosphere—but the craft problem stays consistent: how to keep flavor, memory, and hospitality intact across scale and setting. “It’s the place that I can channel love, grief, any kind of emotion through which has helped me a lot in my life.” Einat has said.
The Work Today
Fast food, when handled by a chef, depends on compression: clear flavor, quick service, and no surplus explanation at the point of eating. As founder of Taïm, Admony works in that register, where immediacy has to carry root, brightness, texture, and satisfaction without the ceremony of a restaurant meal. Restaurant atmosphere and prepared meals ask for different kinds of control.
Signature
The named signatures—Yemeni Chicken Matzo Ball Soup, Shakshuka, and Couscous and Mafroum—show the range of the repertoire through soup, skillet, grain, and stuffed preparation. In Admony’s work, these dishes carry memory through structure rather than ornament.
