i. Biography
Etsunobu Takahashi is the head chef of Nishimuraya Honkan in Kinosaki Onsen, Hyogo, where he has served since 2000. In 2005, he also took on general head chef responsibilities for Nishimuraya Shogetsutei, and the property’s official cuisine page notes his later collaboration in France with Michelin chef Herve Busset in 2011 and his work on Japan Airlines’ domestic first-class menu in 2012.
