Career The line from dish pit to owner is the useful fact here. Evan Rich started at 15 as a dishwasher at Homeward Bounty in Westfield, New Jersey, then moved through The Culinary Institute of America in Hyde Park, New York, and New York City kitchens before settling in San Francisco. Rich Table grows out of that structure. At Rich Table, the work is keyed to balance: technique held tight, but not locked down. Evan Rich’s cooking reads as disciplined without flattening into restraint for its own sake. The restaurant does not announce a single category and the food is stronger for it. What comes through is an approach that trusts timing, texture, and a little mischief to carry a plate.

At Rich Table in San Francisco, Evan Rich describes the restaurant by refusing the usual label game. When asked what kind of restaurant it was, he answered: "I don't know, a food restaurant?" That line tells you what matters in the room: the food is the point, not the packaging. Asparagus with pork belly and sorrel shows how his kitchen works at the level of contrast. Rich said, "At first glance, it seems very simple but there's a lot of complexity of flavor and texture—and a great deal of work that goes into both the preparation and the pickup of the dish." The dish sits squarely in the lane of savory pastry built for surprise, but it only works because the idea is carried through with discipline.
